July 2026
Dear Flora Residents,
Summer is in full swing at the farm, and there's a lot happening.
We've updated our hours across the restaurant, Mango Park Café, and Pool Bar for the season — and we have some new additions to the weekly schedule worth knowing about. We also have some new faces for you to meet on the farm.
This month also brings the Songwriters Series on July 10 with Gabriel Garzón-Montano and Chetes, and Summer Camp for kids ages 5–12. On the harvest side, the fields are producing arugula, kale, Swiss chard, okra, baby carrots, eggplant, and bananas (Azalia is at the Field Shed Monday mornings at 8am if you'd like a tour).
Finally we’re excited to announce our Flora X Mifel Tennis open experience. We hope you can join us on the courts here in Cabo.
We're glad you're part of the community - as always, reach out to the team for anything you need.

From The Kitchen
As we continue to improve the newsletter, one thing we heard from many of you is that you would love to see more recipes from the Flora Kitchen. Chef Aldo and the team have been hard at work creating recipes to share in upcoming newsletter editions — dishes you can enjoy while staying on the farm or recreate once you’re back home. To start, Chef has created a recipe for Tuscan Kale Chips with Roasted Garlic–Habanero Dressing. Perfect for a sunny afternoon on the farm, these kale chips are crisp, savory, and just spicy enough — the kind of snack made for sharing after a garden stroll or before a long lunch.
Tuscan Kale Chips With Roasted Garlic – Habanero Dressing
Ingredients:
2 pounds clean Tuscan kale (no stems)
150 ml extra virgin olive oil
1 tsp kosher salt
For dressing:
5 garlic cloves
1 pc habanero chili
3 egg yolks
200 ml olive oil
1 tsp kosher salt
1 lemon (juice and zest)
Chives
Instructions:
Toss the kale leaves with the olive oil and kosher salt, making sure they’re evenly coated. Spread the kale out on a parchment-lined sheet tray and bake at 200°F for about 45 minutes (or until crispy).
Cook the garlic cloves and habanero in the olive oil over low heat until they’re evenly golden.
Transfer the garlic and habanero to a blender with the egg yolks, salt, and lemon juice. Blend while slowly streaming in the reserved garlic/habanero oil until the mixture comes together like a mayonnaise.
Place the kale chips in a bowl, finish with lemon zest, and serve with the garlic-habanero dressing. Top with chopped chives.
